Spiced Potato Poha
Poha is a popular Indian breakfast or snack made with flattened rice, potatoes and plenty of curry leaves. Lots of ingredients but easy to make. I make mine without peanuts and with ginger so it tastes like a masala dosa filling. Yum!

Ingredients
2 cups poha (medium flakes)
3 small potatoes
2 tblsp coconut oil
1 small onion, diced
1/2 tsp mustard seeds
2-3 chili peppers
1/2 tsp cumin seeds
handful of fresh curry leaves
1/4 tsp tumeric
1 tsp fresh grated/diced ginger
1/2 tsp salt
1/2 tsp sugar
1/2 lemon
Directions
Rinse your poha and set aside in a colander.
Microwave the potatoes in a little bit of water for three minutes to soften up.
Heat up your coconut oil and a cast-iron pan and crackle up your mustard seeds. If using peanuts toast them up, too.
Add in chopped onion, chili peppers, cumin seeds and curry leaves. Sauté for several minutes.
Add in potatoes, turmeric, fresh ginger and turmeric, salt, sugar.
Squeeze half lemon in. Cook several minutes.
Smoosh the potatoes in the pan.
Mix in poha. Eat on its own or serve with warm dosa or chapati.
