Indian Rice Pilau

Ingredients

  • 1 1/4 cup basmati rice

  • 1 small onion, chopped

  • 1 tsp coconut oil

  • 1/4 tsp ground clove

  • 1 tsp ground tumeric

  • 2 bay leaves

  • 3 whole cardamom seeds

  • 1 cinnamon stick

  • 2 1/2 cups boiling water

  • salt to taste

Directions

  1. Rinse rice and set aside.

  2. Sauté onion in coconut oil until very soft, almost caramelized.

  3. Add clove, turmeric, bay leaves, cardamom seeds, and cinnamon stick. Sauté for a minute.

  4. Add rice and stir. Slowly pour in boiling water. Cook for 20 min. Add salt and serve hot.
