Spanish Tortilla with Sweet Potato

I took a classic Spanish tortilla recipe and switched it up by using half sweet potato, red onion and green onion. It’s a variation of an egg frittata. Easy and so yum!

Ingredients

  • Vegetable oil

  • 3 small yellow potatoes

  • 2 sweet potatoes

  • 1/2 small red onion, diced

  • 2 stalks green onion, chopped

  • salt

  • 6 eggs, beat well

  • fresh chopped parsley, optional

Directions

  1. Sauté potato slices in oil in single layers in cast iron pan until browned and crispy on both sides. Add to plate with paper towel.

  2. Turn broiler on low.

  3. Add red onion and green onion. Salt well. Immediately layer on potatoes.

  4. Pour eggs over the potatoes. Put whole pan under broiler for 4 minutes.

  5. Within a few minutes cover the pan with a large plate and flip over onto plate. Slice and serve. Stores in fridge for several days.
