2-Step Basque Cheesecake

This is a crustless, flan-like cheesecake that is so easy to make. Just blend ingredients and bake! Known as “burnt” cheesecake, it has a caramel-like flavor. Top with berries, powdered sugar or cinnamon or enjoy on its own. Try a lower-fat version with light cream cheese and 2% milk instead of cream.

Ingredients

  • 2 (8 oz) blocks cream cheese, softened to room temperature

  • 1 cup granulated white sugar

  • 3 large eggs

  • 1/2 cup heavy cream

  • 1/2 tsp pure vanilla extract



Directions

  1. Preheat oven to 500° F. Grease a 7-inch round cake pan with cooking spray and line it with parchment paper so it’s above the ridges.

  2. Add all ingredients to a blender and blend on high speed for 30-40 seconds until smooth. Pour the batter into the cake pan.

  3. Bake for 20-25 minutes or until the surface turns a light brown. The center will be jiggly.

  4. Refrigerate 2-3 hours or overnight.
