To-Die-For Brownies

These brownies melt in your mouth! Just as easy as a boxed mix, but fresher, richer, gooier and with bragging rights that you made them from scratch. I sub out 1/4 cup sugar for coconut sugar since it’s more nutritious and has a lower glycemic index. Top with mini chocolate chip or cacao nibs for crunch.

Cook: 30 minutes


Ingredients

  • ½ cup salted butter, melted

  • 1 cup sugar (1/4 cup coconut sugar, 3/4 cup white sugar)

  • 2 eggs

  • 1 tsp pure vanilla extract

  • ⅓ cup unsweetened cocoa powder

  • ½ cup all-purpose flour

  • ¼ tsp salt

  • ¼ tsp baking powder

  • ¼ cup mini chocolate chips and/or cacao nibs



Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch rectangle or square glass baking dish.

  2. Mix all ingredients into a bowl, in order of ingredient list. Spread batter into dish. Sprinkle with chocolate chips evenly.

  3. Bake until top is dry and edges have started to pull away from the sides of the pan, about 25 to 30 minutes.
