Raspberry Clafoutis
A lovely summertime clafoutis recipe. Clafoutis is a French dessert made with a flan-like batter, fresh fruit and powdered sugar. If you love egg custard-like treats, you’ll love clafoutis! Try with blueberries, cherries or other fruit. Serve warm or cold.

Ingredients
1 teaspoon butter
1 small basket of fresh raspberries, washed and dried
3 large eggs
½ cup sugar
½ cup flour
1 tablespoon vanilla
½ teaspoon salt
¾ cup milk
½ cup heavy whipping cream
2 tbsp powdered sugar
Directions
Preheat the oven to 350 degrees F. Generously butter a 9 or 10-inch ceramic casserole-style pan or a pie pan. Lay the raspberries in a single layer in the bottom of the pan.
In a medium-sized bowl, whisk the eggs until foamy. Add the sugar and whisk for 3 minutes until well combined. Add flour, salt, and vanilla and whisk vigorously until the batter is smooth. Gradually pour in the milk and cream and whisk until blended. Knock the bowl lightly against the counter to deflate any bubbles, then pour the batter over the raspberries.
Bake on the middle rack of the oven for 50 to 60 minutes, until it's puffed up and lightly browned.
Let cool in the pan for 10 minutes. Dust with powdered sugar.
