Mashed Butternut Squash

An easy, no pre-cutting fall favorite. Bake the whole butternut squash in the oven, butter and add seasoning, scoop and mash. Makes the perfect side dish to a fall or winter meal. Vegetarian, or use olive oil for vegan.

Prep: 10 minutes

Cook: 1.5 hours


Ingredients

  • 1 whole butternut squash

  • 1/4 tsp Ground cinnamon

  • 1/4 tsp Ground ginger

  • 1/8 tsp Ground nutmeg

  • 4 tbsp butter

  • Salt and pepper to taste



Directions

  1. Preheat oven to 400°F. Place the whole butternut squash onto a cookie sheet and bake for 1 hour.

  2. Remove from the oven. Hold the squash with a towel and slice in half. Scoop out seeds.

  3. Add 1 tbsp of butter to each half in the hole where the seeds were. Sprinkle all over with salt, pepper, ginger, cinnamon and nutmeg.

  4. Bake another 30 minutes.

  5. Remove from oven. Make sure it’s completely soft. Scoop out the squash into a glass dish, add remaining butter and mash.
