Mangosteen Tea Shortbread Cookies
A Jessica original! I blended a butter cookie with mangosteen tea I got in Bali. The tea crystals look and taste like a bright pink sugar with a fruity, passionfruit-ish scent. Mangosteen possesses strong antioxidant, anti-cancer, anti-inflammatory, anti-allergic, anti-microbial properties, and can help lower blood pressure and more. Worth a try if looking for a new cookie recipe.

Ingredients
2 cups flour
1 cup salted butter
1/2 cup granulated sugar (or try 1/4 cup sugar + 1/4 cup coconut palm sugar)
1/4 cup mangsteen tea (buying option)
2 egg yolks
2 tsp pure vanilla extract
Directions
Preheat oven to 350F.
Cream the butter, salt, granulated sugar, and half the amount of mangosteen tea together until light and fluffy.
Add the egg yolks while mixing, then add the vanilla extract.
Pour in the flour mixture and mix well.
Roll the dough into a long log. Wrap in parchment paper or plastic, then chill it in the refrigerator for at least an hour.
Sprinkle the remaining mangosteen tea on a clean surface. Unwrap the dough and roll in the sugar.
Use a sharp knife to cut dough into 1/4-inch slices.
Place slices on a parchment-lined baking sheet and bake for 10-12 minutes.
