Lemon Buttercream Frosting

A classic buttercream frosting recipe with fresh squeezed lemon juice. I used Meyer lemons from my garden for a tart lemony kick. Amazing tasting!

Ingredients

  • 1 tbsp vanilla

  • 1 lb confectioner's sugar

  • 1 cup unsalted butter, room temperature (suggested brands are Kerrygold or Strauss)

  • 3 tbsp heavy whipping cream (or milk)

  • 1/2 tsp salt

  • 2 lemons, squeezed

Directions

  1. Whip the butter and salt until smooth.

  2. Add the confectioner’s sugar in several batches.

  3. Add milk/cream, vanilla and lemon juice. Beat until you have an even, fluffy consistency. Add more cream/milk for thinner consistency or more lemon juice to taste.
