Butterscotch Tiramisu
Butterscotch pudding makes for a unique take on the classic Italian tiramisu. Layered with coffee-dipped ladyfingers and a fluffy marscapone mixture with vanilla and Grand Marnier liquer, it’s a truly delicious dessert. No baking required!

Ingredients
1 1/2 cups heavy whipping cream
8 ounces mascarpone cheese
1/3 cup granulated sugar
1 tsp pure vanilla extract
1 1/2 cups cold coffee (I like it decaf)
3 tbsp Grand Marnier
1 package Lady Fingers
1 package butterscotch pudding, cooked as directed and cooled
Cocoa powder for dusting the top
Directions
Add whipping cream, sugar, and vanilla extract to a mixing bowl and beat on medium speed until you get stiff peaks. Fold in marscapone. Set aside.
Pour the coffee and liqueur into a shallow bowl or tall glass. Quickly dip every other lady finger and lay them in a single layer on the bottom of an 8x8' pan. (You can dip all the lady fingers if preferred)
Smooth half the pudding onto the lady finger layer, then half of the mascarpone mixture over the top. Add another layer of dipped lady fingers. Smooth remaining pudding then mascarpone cream over the top.
Dust cocoa powder generously over the top using a fine mesh strainer. Refrigerate for 3-4 hours or up to overnight.
